Background & Region

Peach Bloom comes from the world-renowned Finca El Paraíso in the mountains of Cauca, Colombia, where brothers Diego and Alexander Bermudez continue to push the boundaries of coffee processing and flavor development.

Situated at high elevation with cool mountain temperatures and rich volcanic soils, El Paraíso has become one of the most influential farms in modern specialty coffee. Through years of experimentation and innovation, the Bermudez family has developed fermentation techniques that allow them to highlight remarkably expressive fruit characteristics while maintaining clarity, balance, and sweetness in the cup.

This lot uses Pink Bourbon, a celebrated Colombian varietal prized for its vibrant acidity, floral aromatics, and elegant structure.

Thermal Shock Innovation

At Finca El Paraíso, coffee processing is approached with a level of precision more commonly found in the world of fine wine and advanced fermentation science. Their proprietary Thermal Shock process was developed to preserve delicate aromatics and stabilize flavor at the exact moment fermentation reaches its ideal expression.

Following controlled fermentation using carefully selected microbial cultures, the coffee is exposed to rapid hot and cold water treatments that halt fermentation while preserving vibrant fruit compounds and acidity structure. The coffee is then dried in a controlled dehumidified environment to protect clarity, sweetness, and cup stability. If you're curious about how drying methods shape a coffee's final character, our article on the future of coffee drying techniques explores this in more depth.

Why This Coffee Specifically Tastes So Peachy

The remarkable peach character found in Peach Bloom is the result of both the Pink Bourbon varietal and the advanced fermentation techniques developed at Finca El Paraíso.

Pink Bourbon is naturally known for its floral aromatics, bright acidity, and elegant sweetness. Through carefully managed fermentation, the Bermudez family is able to enhance naturally occurring fruit esters and aromatic compounds already present within the coffee, amplifying notes of ripe peach, pink lemonade, and tropical fruit.

Much like certain winemaking techniques used to emphasize fruit expression and aromatic complexity, the Thermal Shock process helps preserve these delicate flavors at peak intensity. The result is an exceptionally vibrant and layered cup profile that feels both exotic and refined.

Flavor & Character

Peach Bloom delivers an unmistakable peach-forward cup layered with notes of pink lemonade, tropical yellow fruit, caramel sweetness, and soft floral undertones.
